  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Pasta

  • 400 g penne or rigatoni pasta
  • Salt, for the pasta water

For the Alfredo Sauce

  • 3 tablespoons butter
  • 4 cloves garlic, finely minced
  • 2 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1½ cups freshly grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • ½ teaspoon red pepper flakes, optional

For Assembly

  • 1½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: ½ cup sliced mushrooms or 1 cup chopped spinach

Instructions

1. Prepare the Chicken

Preheat your oven to 190°C (375°F). Lightly grease a large 9-by-13-inch baking dish and set it aside.

Pat the chicken breasts dry with paper towels. Place them on a cutting board and, if they are particularly thick, carefully slice them horizontally so they cook evenly.

Drizzle the chicken with olive oil, then season both sides with Italian seasoning, garlic powder, paprika, salt, and black pepper. Rub the seasoning into the chicken so every piece is well coated.

Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for approximately 4–5 minutes per side, depending on thickness. The chicken does not need to be completely cooked through at this stage because it will finish cooking in the oven.

Transfer the chicken to a plate and let it rest for several minutes. Once cool enough to handle, cut it into bite-sized pieces or strips.

2. Cook the Pasta

Bring a large pot of generously salted water to a boil. Add the pasta and cook according to the package directions, but stop cooking it about 2 minutes before it reaches al dente.

This is important because the pasta will continue cooking while the casserole bakes. Slightly undercooked pasta will absorb some of the Alfredo sauce without becoming mushy.

Drain the pasta well. Do not rinse it, as the starch on the surface helps the sauce cling to the noodles.

3. Make the Creamy Alfredo Sauce

While the pasta cooks, prepare the sauce.

Melt the butter in a large saucepan over medium heat. Add the minced garlic and cook for about 30–60 seconds, stirring constantly, until fragrant. Be careful not to brown the garlic.

Sprinkle the flour over the butter and garlic. Whisk continuously for about 1 minute. This creates a simple roux that helps thicken the Alfredo sauce.

Slowly pour in the heavy cream while whisking. Follow with the whole milk, continuing to whisk until the mixture is smooth.

Cook for approximately 3–5 minutes, stirring frequently, until the sauce begins to thicken. It should be creamy enough to coat the back of a spoon but still pour easily.

Reduce the heat to low. Add the Parmesan cheese a little at a time, stirring after each addition until completely melted. Season with Italian seasoning, black pepper, salt, and red pepper flakes if you want a little heat.

Taste the sauce and adjust the seasoning as needed. Remember that Parmesan is naturally salty, so you may not need much additional salt.

4. Combine Everything

Place the cooked pasta in a large mixing bowl. Add the cooked chicken and pour the warm Alfredo sauce over everything.

Gently toss until the pasta and chicken are thoroughly coated. If you’re using spinach or mushrooms, stir them in at this stage. Fresh spinach will wilt from the heat of the sauce, while mushrooms should ideally be sautéed first for the best flavor and texture.

The mixture should look very creamy. If it seems unusually thick, stir in a small splash of milk.

5. Assemble the Bake

Transfer the creamy chicken and pasta mixture to your prepared baking dish. Spread it evenly from edge to edge.

Sprinkle the shredded mozzarella over the top, followed by the grated Parmesan.

For an especially golden crust, make sure the cheese is distributed evenly across the entire surface.

At this point, the casserole can also be covered and refrigerated if you’re preparing it ahead of time. If baking directly from the refrigerator, allow additional cooking time and make sure the center is piping hot before serving.

6. Bake Until Golden and Bubbly

Place the baking dish in the preheated 190°C (375°F) oven.

Bake uncovered for approximately 20–25 minutes, or until the sauce is bubbling around the edges and the cheese has melted and developed a beautiful golden-brown color.

For an extra-crispy cheese topping, switch the oven to broil/grill for the final 1–2 minutes. Watch it carefully because cheese can go from perfectly golden to burnt very quickly.

Remove the casserole from the oven and allow it to rest for 5–10 minutes before serving. This gives the sauce a chance to settle and makes the casserole easier to portion.

Garnish generously with freshly chopped parsley.

Serving Suggestions

Serve this creamy chicken Alfredo bake while it is hot and bubbly. A simple green salad with a light vinaigrette makes an excellent side because its freshness balances the richness of the pasta.

You can also serve it with garlic bread, roasted broccoli, steamed vegetables, or sautéed green beans.

For extra flavor, sprinkle a little freshly grated Parmesan and cracked black pepper over individual servings just before eating.

Helpful Tips

Don’t overcook the pasta. Since it continues cooking in the oven, slightly undercooking it gives you the best final texture.

Use freshly grated Parmesan. Pre-shredded Parmesan often does not melt as smoothly because of added anti-caking ingredients.

Don’t boil the Alfredo sauce after adding Parmesan. Keep the heat low so the cheese melts smoothly without becoming grainy.

Add vegetables for a complete meal. Broccoli, spinach, mushrooms, peas, or roasted bell peppers all work wonderfully.

Make it ahead. Assemble the casserole, cover it tightly, and refrigerate it for up to 24 hours. Add a little extra sauce before baking if the pasta has absorbed too much.

Store leftovers properly. Refrigerate leftovers in an airtight container and consume within 3–4 days. Reheat gently in the microwave or oven with a splash of milk to restore some of the sauce’s creaminess.

Final Result

The finished Creamy Chicken Alfredo Bake should have tender pieces of seasoned chicken nestled among perfectly cooked pasta, all coated in a luxurious garlic-Parmesan cream sauce. The melted mozzarella creates a stretchy, cheesy topping while the Parmesan develops a delicious golden crust.

With its creamy center, savory chicken, garlicky Alfredo sauce, and bubbling cheese topping, this is a comforting, crowd-pleasing meal that turns simple ingredients into an impressive dinner.
