Sourdough Pistachio Cranberry Shortbread Cookies

Sourdough Pistachio Cranberry Shortbread Cookies

Ingredients

For the cookies

  • 1 cup (226 g) unsalted butter, softened to room temperature
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup (120 g) sourdough discard, unfed
  • 2 cups (250 g) all-purpose flour
  • ½ teaspoon salt
  • ¾ cup (90 g) roasted pistachios, roughly chopped
  • ½ cup (75 g) dried cranberries, finely chopped
  • ½ teaspoon finely grated orange zest, optional

Optional decoration

  • 100–150 g white chocolate, melted
  • 2–3 tablespoons finely chopped pistachios
  • A small handful of finely chopped dried cranberries

Instructions

1. Prepare the pistachios and cranberries

If you are using raw pistachios, roast them first for the best flavor. Spread the pistachios on a baking sheet and toast them in a 350°F (175°C) oven for approximately 5–7 minutes. Watch them carefully because nuts can burn quickly.

Allow the pistachios to cool completely before chopping them. Roughly chopped pieces work particularly well because they provide different textures throughout the cookies.

Finely chop the dried cranberries. Large pieces can make the cookies difficult to slice later, especially if you are making refrigerator-style shortbread logs.

2. Cream the butter and sugars

Place the softened butter in a large mixing bowl. Add the granulated sugar and powdered sugar. Using a hand mixer or stand mixer, beat the mixture for about 2 minutes, or until it is smooth, creamy, and slightly lighter in color.

Avoid whipping the butter excessively. Unlike some soft, cakey cookies, shortbread does not need a large amount of incorporated air. Over-creaming can produce cookies that spread more than desired.

Add the vanilla extract and orange zest, if using, and mix briefly.

3. Add the sourdough discard

Add the sourdough discard to the butter mixture. Mix on low speed until it is incorporated.

The mixture may look slightly curdled or uneven at this stage. That is completely normal. The sourdough discard adds moisture and acidity, so it may not blend into the butter as smoothly as a traditional shortbread mixture.

For the best flavor, use sourdough discard that has been refrigerated for a few days. Older discard generally has a more pronounced tang, which can create a lovely contrast with the sweet cranberries.

4. Add the flour and salt

In a separate bowl, whisk together the all-purpose flour and salt.

Gradually add the flour mixture to the wet ingredients. Mix on low speed just until the flour is almost incorporated.

Do not overmix the dough. Once you no longer see large streaks of dry flour, stop mixing.

Fold in the chopped pistachios and cranberries using a wooden spoon or spatula. If you are using orange zest, it can also be added at this stage.

The finished dough should be soft but firm enough to shape.

5. Shape the dough

Divide the dough into two equal portions.

Place each portion on a sheet of parchment paper. Shape the dough into a log approximately 2 inches (5 cm) in diameter. Roll the parchment around the dough and gently press to create an even cylinder.

Twist the ends of the parchment like a candy wrapper and refrigerate the logs for at least 1 hour.

For the best flavor and easiest slicing, you can refrigerate the dough overnight. Chilling is particularly important for shortbread because it allows the butter to firm up, helping the cookies maintain their shape during baking.

6. Slice the cookies

When you’re ready to bake, preheat the oven to 350°F (175°C).

Line one or two baking sheets with parchment paper.

Remove the chilled dough from the refrigerator and unwrap it. Using a sharp knife, slice the logs into rounds approximately ¼ inch (6 mm) thick.

If the dough cracks slightly while slicing, allow it to sit at room temperature for 5–10 minutes before continuing. You can also gently press any cracks back together with your fingers.

Arrange the cookies on the prepared baking sheets, leaving about an inch of space between them.

7. Bake

Bake the cookies for approximately 11–14 minutes.

The cookies should remain relatively pale in the center, with the edges just beginning to turn a light golden brown. Do not wait until the entire cookie is deeply browned. Shortbread is at its best when it is delicate and buttery.

Baking time may vary depending on the thickness of your cookies and your oven.

Allow the cookies to cool on the baking sheet for about 5 minutes. They will be fragile while hot but will firm up as they cool.

Transfer them carefully to a wire rack and allow them to cool completely.

Optional White Chocolate Finish

For a more festive presentation, decorate the cooled cookies with white chocolate.

Melt the white chocolate gently in a microwave-safe bowl in 15–20-second intervals, stirring after each interval. Alternatively, melt it over a double boiler.

Dip one end or half of each cookie into the melted chocolate. Place the dipped cookies on parchment paper.

Before the chocolate sets, sprinkle the cookies with finely chopped pistachios and a few pieces of dried cranberry.

Allow the chocolate to set completely before storing the cookies.

Recipe Tips

The quality of the butter makes a noticeable difference in shortbread, so use a good-quality unsalted butter when possible. Make sure it is softened but not melted. Soft butter should yield easily when pressed with a finger while still holding its shape.

The sourdough discard should be relatively thick. If your discard is unusually runny, you may need slightly more flour to achieve a workable dough.

Don’t skip the chilling step. Because these cookies contain a generous amount of butter, the dough needs to be properly chilled before baking. Cold dough spreads less and produces a cleaner, more defined shortbread texture.

For an especially elegant flavor combination, orange zest is highly recommended. The citrus complements both the pistachios and cranberries while balancing the richness of the butter.

Storage

Store completely cooled cookies in an airtight container at room temperature for approximately 5–7 days. Place parchment paper between layers if you have decorated them with chocolate.

The unbaked dough can also be prepared ahead of time. Wrapped tightly, the shortbread logs can be refrigerated for several days or frozen for longer storage. If frozen, allow the dough to thaw in the refrigerator before slicing.

Final Thoughts

These Sourdough Pistachio Cranberry Shortbread Cookies are an excellent choice for holiday baking, afternoon tea, cookie exchanges, or simply making something special from ingredients you already have in your kitchen.

The buttery shortbread provides the perfect base for the slightly tangy sourdough discard, while pistachios contribute crunch and cranberries add a bright, fruity sweetness. Orange zest and white chocolate can take the cookies in an even more festive direction, but they are equally delicious without either.

The key to truly beautiful shortbread is simple: use softened butter, avoid overmixing, chill the dough thoroughly, and bake just until the edges are lightly golden. With those few details in mind, you’ll have crisp, tender, buttery cookies with a wonderful balance of sweet, nutty, fruity, and subtly tangy flavors.
