Ingredients
For the Cookie Dough
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Pecan Filling
- 1 cup finely chopped pecans
- 1/4 cup brown sugar
- 2 tablespoons melted butter
- 2 tablespoons heavy cream
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
1. Prepare the Oven
Preheat your oven to 175°C (350°F).
Line a baking sheet with parchment paper.
2. Make the Cookie Dough
Add the softened butter, brown sugar, and granulated sugar to a large bowl.
Beat for about 2–3 minutes, until creamy and smooth.
Add the egg yolk and vanilla extract. Mix until well combined.
3. Add the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture.
Mix just until a soft dough forms. Avoid overmixing.
4. Shape the Cookies
Divide the dough into approximately 12–14 portions.
Roll each portion into a ball and place it on the prepared baking sheet.
Using your thumb or the back of a small spoon, gently press a shallow indentation into the center of each cookie.
This space will hold the delicious pecan filling.
5. Prepare the Pecan Filling
Place the chopped pecans, brown sugar, melted butter, heavy cream, maple syrup, vanilla, and salt in a small bowl.
Stir until everything is evenly combined.
The mixture should be moist and sticky enough to hold together.
6. Fill the Cookies
Spoon a small amount of the pecan mixture into the center of each cookie.
Don’t overfill them because the filling can spread slightly during baking.
7. Bake
Place the cookies in the preheated oven.
Bake for approximately 10–13 minutes, or until the cookie edges are lightly golden.
The centers may still look slightly soft when you remove them from the oven.
8. Cool
Allow the cookies to cool on the baking sheet for about 5 minutes.
Carefully transfer them to a wire rack and let them cool completely.
The pecan filling will become firmer as the cookies cool.
Tips for Perfect Pecan Pie Cookies
Toast the Pecans
For deeper flavor, toast the chopped pecans in a dry skillet over medium-low heat for 3–5 minutes before making the filling. Let them cool before using.
Don’t Overbake
The cookies should have lightly golden edges and slightly soft centers. They will firm up as they cool.
Chill Soft Dough
If the dough feels too soft to shape, refrigerate it for 20–30 minutes before forming the cookies.
Use Fresh Pecans
Fresh pecans give the cookies a much better buttery, nutty flavor.
Variations
Chocolate Pecan Cookies
Add a few chocolate chips to the cookie dough or drizzle the cooled cookies with melted chocolate.
Salted Pecan Pie Cookies
Sprinkle a tiny amount of flaky salt over the cookies after baking.
Cinnamon Pecan Cookies
Add 1/2 teaspoon cinnamon to the cookie dough for a warm, spiced flavor.
Maple Pecan Cookies
Replace some of the brown sugar in the filling with additional maple syrup for a stronger maple flavor.
Storage
Store completely cooled cookies in an airtight container at room temperature for approximately 3–4 days.
For longer storage, place them in a freezer-safe container and freeze for up to 2 months.
Allow frozen cookies to thaw at room temperature before serving.
