Keto Flourless Chocolate Cake

Keto Flourless Chocolate Cake

Ingredients

For the Cake

  • 170 g (6 oz) unsweetened dark chocolate, preferably 85–100% cocoa
  • 115 g (½ cup) unsalted butter
  • 150 g (¾ cup) granulated keto-friendly sweetener, such as erythritol or allulose
  • 4 large eggs, at room temperature
  • 30 g (¼ cup) unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • ¼ teaspoon espresso powder, optional
  • 2 tablespoons heavy cream
  • 2 tablespoons unsweetened almond milk, if needed

Optional Toppings

  • Unsweetened whipped cream
  • Fresh raspberries or strawberries
  • A dusting of unsweetened cocoa powder
  • Sugar-free chocolate shavings
  • Chopped toasted pecans or walnuts

Instructions

1. Prepare the Oven and Pan

Preheat your oven to 175°C (350°F). Grease an 8-inch (20-cm) round cake pan generously with butter. For easier removal, line the bottom with parchment paper and lightly grease the parchment as well.

Because this cake is flourless, it has a delicate structure while warm. Preparing the pan carefully will make it much easier to remove the finished cake without breaking it.

2. Melt the Chocolate and Butter

Place the chopped unsweetened chocolate and butter in a heatproof bowl. Set the bowl over a saucepan containing a small amount of gently simmering water, making sure the bottom of the bowl does not touch the water.

Stir occasionally until the chocolate and butter have completely melted and become smooth and glossy.

Alternatively, you can melt them together in the microwave. Heat in 20–30 second intervals, stirring well between each interval to prevent the chocolate from overheating.

Once melted, remove the bowl from the heat and allow the mixture to cool for a few minutes.

3. Add the Sweetener

Stir the keto-friendly sweetener into the warm chocolate mixture. Mix thoroughly until evenly incorporated.

If using erythritol, remember that it may produce a slightly cooler sensation in the mouth and can sometimes recrystallize as the cake cools. Allulose generally gives a softer, more traditionally cake-like texture.

4. Add the Eggs

Add the eggs one at a time, whisking well after each addition. This helps create a smooth, cohesive batter.

Add the vanilla extract and heavy cream, then whisk again. The mixture should become shiny and relatively smooth.

5. Add the Dry Ingredients

Sift the cocoa powder over the chocolate mixture. Add the salt and espresso powder if using.

Fold everything together with a spatula until no visible streaks of cocoa remain. Avoid overmixing once the batter is combined.

If your batter seems unusually thick, add up to 2 tablespoons of unsweetened almond milk, one tablespoon at a time. The finished batter should be thick but pourable.

6. Fill the Pan

Pour the batter into the prepared cake pan. Smooth the surface with a spatula.

Gently tap the pan against the counter once or twice to release any large air bubbles.

Place the pan in the center of the preheated oven.

7. Bake

Bake for approximately 20–25 minutes.

The edges should look set, while the center should remain slightly soft. Do not wait for the center to become completely firm. A flourless chocolate cake continues to set as it cools, and overbaking can turn the texture from fudgy to dry.

A toothpick inserted near the center should come out with moist chocolate crumbs, rather than completely clean.

8. Cool Completely

Remove the cake from the oven and place it on a wire rack.

Let it cool in the pan for about 15–20 minutes. Carefully run a thin knife around the edge to loosen it, then remove the cake from the pan.

Allow it to cool completely before slicing.

For an especially dense, truffle-like texture, refrigerate the cooled cake for 1–2 hours before serving. Let it sit at room temperature for about 15 minutes before eating.

Serving Suggestions

This cake is delicious on its own, but a few simple toppings can make it feel extra special.

For a classic presentation, dust the top with a small amount of unsweetened cocoa powder. You can also add a spoonful of lightly sweetened whipped cream and a few fresh raspberries.

For an indulgent chocolate finish, drizzle individual slices with a small amount of melted sugar-free chocolate. Chopped toasted pecans or walnuts add a pleasant crunch that contrasts with the soft center.

If you prefer a warm dessert, microwave an individual slice for approximately 10–15 seconds before serving. Pair it with unsweetened whipped cream or a low-carb vanilla cream.

Tips for the Best Keto Flourless Chocolate Cake

Use good-quality chocolate. Chocolate is the primary flavor in this recipe, so the quality of the chocolate makes a noticeable difference. If you use very dark chocolate, adjust the sweetener according to your preferred level of sweetness.

Don’t overbake. This is the most important rule. The center should still have a slight wobble when the cake comes out of the oven. It will firm up as it cools.

Bring the eggs to room temperature. Room-temperature eggs incorporate more easily into the chocolate mixture and help produce a smoother batter.

Cool before cutting. Cutting the cake while it is very warm can cause the center to collapse or appear excessively soft. Allowing it to cool gives the structure time to set.

Adjust sweetness to taste. Different keto sweeteners vary considerably in sweetness. If using very dark chocolate, you may prefer a little more sweetener; if using a sweeter chocolate, you may need less.

Storage

Store leftover cake in an airtight container in the refrigerator for up to 5 days. The texture often becomes even richer and fudgier after chilling.

You can also freeze individual slices. Wrap each slice tightly and place it in a freezer-safe container or bag. Freeze for up to 2 months. Thaw overnight in the refrigerator and bring to room temperature before serving.

Nutrition

Nutrition will vary depending on the chocolate and sweetener used. Using a zero-calorie keto sweetener and dividing the cake into 10 slices, each serving will generally be low in carbohydrates, but exact net-carb values should be calculated from the specific brands of ingredients you use.

This keto flourless chocolate cake is proof that a low-carb dessert doesn’t have to feel like a compromise. With melted dark chocolate, butter, eggs, and cocoa powder, you get a wonderfully rich cake with a dense, fudgy center and an elegant chocolate flavor. Serve it chilled for a truffle-like texture or slightly warmed for an irresistibly soft dessert.
