Instructions

1. Cook the macaroni

Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package directions until just tender. Avoid overcooking it because the pasta will continue cooking slightly when combined with the hot beef and cheese sauce.

Before draining, reserve about ½ cup of pasta water. Drain the macaroni and set it aside.

The reserved pasta water is useful because its starch can help loosen the cheese sauce later without needing a large amount of cream or butter.

2. Prepare the cheeseburger beef

Heat a large skillet over medium-high heat and add the olive oil.

Add the diced onion and cook for about 2–3 minutes until it begins to soften. Add the ground beef and break it apart with a wooden spoon or spatula.

Cook for approximately 5–7 minutes, stirring regularly, until the beef is thoroughly cooked and nicely browned.

If your beef releases a lot of excess fat, carefully drain some of it. Keeping a small amount of the flavorful juices will help the finished bowl taste more like a cheeseburger.

Add the minced garlic, smoked paprika, garlic powder, onion powder, black pepper, and salt. Stir and cook for another 30–60 seconds.

3. Add the burger flavors

Reduce the heat to medium-low.

Stir in the ketchup, mustard, and Worcestershire sauce. These three ingredients give the beef that unmistakable cheeseburger flavor.

Cook for another 1–2 minutes, stirring until the beef is evenly coated.

At this point, you should have a skillet full of savory, slightly tangy, well-seasoned beef.

4. Make the creamy cheese sauce

Turn the heat to low and add the milk.

Gradually sprinkle in the grated cheddar, stirring constantly until the cheese melts into the beef mixture.

If the sauce becomes too thick, add a splash of the reserved pasta water.

Now comes the protein-boosting ingredient: Greek yogurt.

Remove the skillet from the heat and allow it to cool for about 1 minute. Stir the Greek yogurt into the mixture until everything becomes creamy and smooth.

Avoid adding the yogurt over very high heat, as excessive heat can cause it to separate or become grainy.

5. Combine the macaroni

Add the cooked macaroni to the skillet.

Gently fold everything together until the pasta is completely coated with the cheesy beef mixture.

If necessary, add another splash of pasta water until you reach your preferred consistency.

For a particularly creamy mac bowl, don’t make the sauce too thick. It will continue to thicken slightly as it sits.

6. Make the burger sauce

In a small bowl, combine the Greek yogurt, light mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder, and smoked paprika.

Mix until smooth.

Taste the sauce and adjust it according to your preference. Add more mustard for tanginess, more ketchup for sweetness, or additional pickle juice for a sharper burger-style flavor.

7. Assemble the bowl

Divide the cheeseburger macaroni between two bowls.

Top each serving with diced tomatoes, chopped pickles, and sliced green onions.

Drizzle generously with the burger sauce.

For extra cheeseburger vibes, add a small amount of shredded cheddar, a few pickle slices, or a sprinkle of sesame seeds.

You can also add shredded lettuce just before serving for a fresh crunch.

High-Protein Tips

The easiest way to increase the protein content is to use lean ground beef and high-protein pasta. You can replace regular macaroni with chickpea, lentil, or other protein-enriched pasta.

Greek yogurt is another excellent addition because it provides creaminess while contributing substantially more protein than heavy cream.

For an even higher-protein version, increase the beef to 300 g and use 100 g of Greek yogurt in the cheese mixture. You can also add extra lean beef as a topping.

If you’re trying to reduce calories, use 95% lean ground beef, reduced-fat cheddar, low-fat milk, and light mayonnaise.

Meal-Prep Instructions

This recipe is excellent for meal prep.

Prepare the entire mixture, allow it to cool, and divide it into airtight containers. Refrigerate for up to 3–4 days.

When reheating, add a tablespoon or two of milk or water before microwaving. Heat in short intervals, stirring between each interval. This helps bring the creamy sauce back to its original consistency.

Keep fresh toppings such as lettuce, tomatoes, and pickles separate and add them after reheating.

Serving Suggestions

For a balanced meal, serve the mac bowl with a simple side salad or steamed vegetables. Broccoli, green beans, cucumber, or roasted peppers work particularly well.

If you’re making this as a post-workout meal, the combination of lean beef, pasta, cheese, and Greek yogurt provides a substantial mixture of protein and carbohydrates.

For a lower-carb option, replace half of the macaroni with cauliflower or broccoli while keeping the beef and cheese mixture the same.

Final Result

The finished bowl should be creamy, cheesy, savory, tangy, and packed with classic cheeseburger flavor. The browned beef provides the hearty protein base, while Greek yogurt adds extra protein and creaminess. Pickles and mustard cut through the richness, and the macaroni turns the whole dish into a satisfying comfort-food meal.

For the best texture, serve it immediately while the cheese sauce is warm and creamy, then finish with plenty of pickles and burger sauce.
