Cottage Cheese Cookies

Cottage Cheese Cookies

.

Ingredients

  • 1 cup cottage cheese, preferably small-curd
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon, optional
  • ½ cup powdered sugar, for dusting
  • ½ cup chocolate chips, raisins, or chopped nuts, optional

Instructions

1. Prepare the cottage cheese

Start by draining the cottage cheese thoroughly. This step is important because excess liquid can make the cookie dough too wet. Place the cottage cheese in a fine-mesh strainer and allow it to drain for several minutes.

For a smoother cookie texture, you can blend the cottage cheese briefly in a food processor or blender until it becomes creamy. If you prefer a little texture in the finished cookies, simply mash it with a fork instead.

2. Prepare the oven and baking sheets

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. This prevents the cookies from sticking and makes cleanup easier.

Allow the oven to fully preheat before baking. A properly heated oven helps the cookies spread and rise evenly.

3. Cream the butter and sugar

Place the softened butter and granulated sugar in a large mixing bowl. Beat them together with an electric mixer for about 2–3 minutes, until the mixture is pale, creamy, and fluffy.

This step incorporates air into the dough, which helps produce lighter cookies. Avoid using melted butter because it can make the cookies spread excessively.

4. Add the wet ingredients

Beat in the egg and vanilla extract until well combined. Add the drained cottage cheese and mix until the ingredients are evenly incorporated.

The mixture may look slightly lumpy if you did not blend the cottage cheese, and that is perfectly fine. Cottage cheese contains considerable moisture, so the batter will be softer than traditional cookie dough at this stage.

5. Combine the dry ingredients

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if using.

Gradually add the dry ingredients to the cottage cheese mixture. Mix on low speed or stir gently with a wooden spoon until a soft dough forms.

Do not overmix. Once the flour disappears, stop stirring. Overmixing can develop too much gluten and make the cookies less tender.

If you are adding chocolate chips, raisins, or chopped nuts, gently fold them into the dough now.

6. Chill the dough

Cover the bowl and refrigerate the dough for approximately 30–45 minutes.

Because cottage cheese contains moisture, the dough can be softer than ordinary cookie dough. Chilling makes it easier to handle and also helps the cookies maintain their shape during baking.

If the dough still feels extremely sticky after chilling, mix in 1–2 additional tablespoons of flour.

7. Shape the cookies

Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets. Leave approximately 2 inches of space between each cookie because they will spread slightly.

For evenly shaped cookies, use a small cookie scoop. You can also lightly roll each portion between your palms, although the dough may remain somewhat soft.

For a sweeter finish, sprinkle the tops lightly with granulated sugar before baking.

8. Bake

Place the baking sheet in the preheated oven and bake for approximately 10–14 minutes, depending on the size of your cookies.

The cookies should look set and lightly golden around the edges. The centers may still appear slightly soft when you remove them from the oven. Do not wait for the entire cookie to become dark golden, as this can result in a dry texture.

Bake one tray at a time if your oven tends to bake unevenly.

9. Cool the cookies

Allow the cookies to cool on the baking sheet for about 5 minutes. They will be delicate when they first come out of the oven, so moving them immediately can cause them to break.

After 5 minutes, transfer them to a wire rack and let them cool completely.

Once cooled, dust the cookies generously with powdered sugar. You can also drizzle them with a simple vanilla glaze made from powdered sugar and a small amount of milk.

Tips for Perfect Cottage Cheese Cookies

Drain the cottage cheese well. Excess liquid is one of the biggest reasons cottage cheese cookies can become too soft or difficult to shape.

Use room-temperature butter. Softened butter combines more easily with sugar and gives the cookies a pleasant texture.

Don’t overbake. Cottage cheese helps keep these cookies moist, but baking them too long can remove that tenderness.

Chill when necessary. If your kitchen is warm or your cottage cheese is particularly moist, chilling the dough for an hour can make a significant difference.

Try different flavors. Lemon zest, orange zest, almond extract, cinnamon, nutmeg, chocolate chips, raisins, dried cranberries, or chopped walnuts can all complement the mild flavor of cottage cheese.

Storage

Store completely cooled cookies in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate them for up to about 1 week.

You can also freeze the baked cookies. Place them in a freezer-safe container with parchment paper between the layers and freeze for up to 2–3 months. Thaw them at room temperature before serving.

Serving Suggestions

Cottage cheese cookies are delicious on their own, but they are especially good with a cup of tea, coffee, or hot chocolate. For a special dessert, serve them alongside fresh berries and a little whipped cream.

If you prefer a more festive cookie, dip half of each cooled cookie into melted chocolate and allow the chocolate to set. Another option is to sandwich two cookies together with vanilla buttercream, cream cheese frosting, or fruit preserves.

Final Result

These cottage cheese cookies are a wonderful alternative to traditional butter cookies. The cottage cheese gives them a tender, moist interior and a subtle tang, while butter and vanilla provide the familiar richness you expect from a homemade cookie. With a simple dusting of powdered sugar, they make an attractive and comforting treat that is easy to prepare with everyday ingredients.

The recipe is also flexible: keep the cookies plain for a delicate tea-time treat, or add chocolate chips, nuts, dried fruit, citrus zest, or warm spices to create your own favorite version.
