πŸ‹ Flourless Lemon Greek Yogurt Cake

Ingredients

  • 2 cups plain Greek yogurt
  • 3 large eggs
  • Β½ cup granulated sugar
  • ΒΌ cup cornstarch
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 teaspoon vanilla extract
  • ΒΌ teaspoon salt
  • Β½ teaspoon baking powder
  • Powdered sugar, for serving
  • Extra lemon zest, optional

Equipment

  • 8-inch round cake pan
  • Parchment paper
  • Large mixing bowl
  • Whisk
  • Measuring cups and spoons

Instructions

1. Prepare the Oven

Preheat your oven to 350Β°F (175Β°C). Allow the oven to heat fully before baking.

2. Prepare the Cake Pan

Line the bottom of an 8-inch round cake pan with parchment paper. Lightly grease the sides and bottom so the cake will release easily.

3. Mix the Yogurt

Place the Greek yogurt in a large bowl. Whisk it gently until smooth and creamy.

4. Add the Eggs

Add the eggs one at a time, whisking after each addition. Avoid overmixing; you simply want the mixture to become smooth.

5. Add the Sugar

Add the sugar and whisk until it is evenly incorporated.

6. Add the Lemon

Add the fresh lemon juice and finely grated lemon zest. The zest is especially important because it gives the cake a stronger lemon aroma.

7. Add Vanilla

Mix in the vanilla extract.

8. Add the Dry Ingredients

Add the cornstarch, baking powder, and salt. Whisk until there are no obvious lumps.

The batter should be smooth and fairly thick.

9. Pour Into the Pan

Pour the batter into your prepared cake pan. Gently tap the pan on the counter once or twice to remove large air bubbles.

10. Bake

Place the pan in the preheated oven and bake for approximately 35–45 minutes.

The edges should look set, while the center can have a slight gentle wobble.

11. Cool the Cake

Remove the cake from the oven and allow it to cool in the pan for about 15–20 minutes.

Then carefully loosen the edges with a thin knife.

12. Chill for the Best Texture

For an especially creamy texture, transfer the cake to the refrigerator and chill it for at least 1–2 hours.

It becomes firmer and easier to slice as it cools.

How to Serve

Once chilled, remove the cake from the pan and place it on
