  • 500 g ground beef, lamb, or a mixture of both
  • 1 cup uncooked long-grain rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin, optional
  • 2 tablespoons olive oil

For the Tomato Sauce

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 800 g crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 teaspoon sugar, optional
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, for garnish

Preparing the Cabbage

The first step is to soften the cabbage leaves so they become flexible enough to wrap around the filling. Remove any damaged outer leaves from the cabbage and rinse the head thoroughly.

Bring a large pot of salted water to a boil. Carefully place the whole cabbage into the pot. Let it cook for several minutes, then use tongs to gently remove the softened outer leaves. Continue cooking the cabbage and removing leaves as they become tender.

You want the leaves to be soft and flexible but not falling apart. Usually, around 12 to 16 large leaves are enough for this recipe. Place the softened leaves on a plate or tray and allow them to cool.

Once the leaves are cool enough to handle, use a small knife to trim the thick central rib from each leaf. Do not cut the leaf completely in half. Removing the thickest part makes rolling much easier.

Making the Filling

While the cabbage is cooling, prepare the filling.

Place the ground meat in a large bowl. Add the uncooked rice, chopped onion, minced garlic, egg, parsley, salt, black pepper, paprika, oregano, and cumin if using.

Mix everything gently with your hands or a wooden spoon until the ingredients are evenly combined. Avoid overmixing because this can make the meat filling dense rather than tender.

Using uncooked rice is convenient because it absorbs the flavorful juices released by the meat and sauce while the cabbage rolls cook. The rice will expand during cooking, so avoid filling each cabbage leaf too generously.

Making the Tomato Sauce

Heat olive oil in a large oven-safe pot or Dutch oven over medium heat. Add the chopped onion and cook for about 4 to 5 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for another 30 seconds. Stir in the tomato paste and cook for about one minute. This short cooking step helps deepen the flavor of the tomato paste.

Pour in the crushed tomatoes and broth. Add paprika, oregano, salt, pepper, and a small amount of sugar if the tomatoes taste particularly acidic.

Bring the sauce to a gentle simmer and cook for approximately 8 to 10 minutes. The sauce does not need to be completely thick because the cabbage rolls will continue cooking in it.

Rolling the Cabbage

Place one cabbage leaf on a clean work surface with the inside facing upward. Put approximately 2 to 3 tablespoons of filling near the bottom center of the leaf.

Fold the bottom edge over the filling. Fold the sides inward, then roll the cabbage forward tightly, similar to rolling a small burrito. Keep the roll secure without squeezing it excessively because the rice needs room to expand.

Repeat with the remaining cabbage leaves and filling.

If some leaves are too small or torn, do not throw them away. You can place them at the bottom of the cooking pot or use them to cover the cabbage rolls during cooking.

Arranging the Rolls

Spread a thin layer of tomato sauce across the bottom of a large oven-safe pot or baking dish. Arrange the cabbage rolls seam-side down in a single layer if possible.

If you have more rolls than fit in one layer, place another layer on top. Pour the remaining tomato sauce over the cabbage rolls, making sure they are well covered.

For extra flavor, place a few leftover cabbage leaves over the top before covering the pot. This helps protect the rolls while they cook.

Cooking the Cabbage Rolls

Cover the pot tightly with a lid or aluminum foil.

For oven cooking, preheat the oven to 180°C (350°F). Place the covered cabbage rolls in the oven and bake for approximately 75 to 90 minutes.

The cabbage should become very tender, while the meat should be fully cooked and the rice soft.

If you prefer stovetop cooking, place the covered pot over low heat and simmer gently for about 60 to 75 minutes. Check occasionally to make sure there is enough liquid in the pot. If the sauce becomes too thick, add a little broth or water.

When the cabbage rolls are finished, allow them to rest for approximately 10 minutes before serving. This gives the filling time to settle and makes the rolls easier to serve without breaking.

Serving Suggestions

Stuffed cabbage rolls are delicious served hot with plenty of tomato sauce spooned over the top. Sprinkle them with freshly chopped parsley for color and freshness.

For a creamy contrast, serve them with a spoonful of plain yogurt or sour cream. A simple cucumber salad, roasted vegetables, or crusty bread also pairs beautifully with the dish.

For a Middle Eastern-inspired variation, you can add a little ground cumin and cinnamon to the filling and serve the cabbage rolls with garlic yogurt. For a more Eastern European flavor, keep the seasoning simple and add sour cream when serving.

Tips for Perfect Stuffed Cabbage Rolls

Do not overfill the leaves. The rice expands during cooking, so leave enough space inside each roll.

Soften the cabbage properly. If the leaves are too firm, they may crack while rolling. If they become excessively soft, they can tear easily.

Trim thick cabbage ribs. This small step makes rolling much easier and helps the cabbage cook evenly.

Keep the rolls covered with sauce. The tomato sauce provides moisture and flavor while helping the rice cook properly.

Let the rolls rest before serving. Freshly cooked cabbage rolls are very hot and delicate. A short resting period makes them easier to handle.

Storage and Reheating

Stuffed cabbage rolls are excellent for meal preparation because their flavor often becomes even better after resting overnight. Allow leftovers to cool before transferring them to an airtight container. Refrigerate for up to 3 to 4 days.

To reheat, place the cabbage rolls in a covered saucepan with some of the tomato sauce and warm them gently over low heat. They can also be reheated in the microwave in a covered microwave-safe dish.

You can also freeze cooked cabbage rolls. Allow them to cool completely, place them in a freezer-safe container with some sauce, and freeze for up to about 3 months for best quality. Thaw them in the refrigerator before reheating thoroughly.

Final Thoughts

Stuffed cabbage rolls are the kind of meal that brings together simple ingredients in a wonderfully satisfying way. Tender cabbage leaves surround a savory rice and meat filling, while the rich tomato sauce keeps everything moist and flavorful. Although preparing and rolling the cabbage takes a little time, the process is straightforward and well worth the effort.

Once you master the basic recipe, it is easy to customize the filling with different meats, herbs, spices, or even vegetables. Whether served for a family dinner, holiday gathering, or cozy weekend meal, these homemade stuffed cabbage rolls are a delicious, filling, and comforting dish that is sure to become a favorite.
