๐Ÿ“ No-Bake Strawberry Icebox Cake

Ingredients

  • 2 cups fresh strawberries, sliced
  • 2 cups heavy whipping cream
  • ยฝ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package graham crackers or plain tea biscuits
  • 2 tablespoons strawberry jam, optional

Instructions

1. Prepare the Strawberries

Wash the strawberries and pat them dry. Remove the green tops and slice the strawberries into thin pieces. Keep a few strawberries aside for decorating the finished dessert.

2. Make the Whipped Cream

Pour the cold heavy cream into a large bowl. Add powdered sugar and vanilla extract. Beat with an electric mixer until the cream becomes thick and fluffy and holds soft peaks. Avoid overmixing.

3. Prepare the Dish

Use an 8 ร— 8-inch baking dish or another similar-sized dish. No greasing is necessary.

4. Make the First Layer

Arrange graham crackers or plain tea biscuits across the bottom of the dish. Break a few crackers into smaller pieces if needed to cover the empty spaces.

5. Add the Cream

Spread a layer of whipped cream evenly over the cookies.

6. Add the Strawberries

Place sliced strawberries over the whipped cream. Spread them evenly so that every portion will contain strawberries.

If you want extra strawberry flavor, lightly drizzle some strawberry jam over the fruit.

7. Repeat the Layers

Continue layering in this order:

Cookies โ†’ whipped cream โ†’ strawberries

Repeat until the ingredients are used. Finish with a generous layer of whipped cream on top.

8. Decorate

Arrange the remaining strawberry slices over the top. You can also add a few whole strawberries or small dollops of whipped cream for decoration.

9. Refrigerate

Cover the dish and refrigerate for at least 6 hours. For the softest, most cake-like texture, refrigerate it overnight.

10. Serve

Remove the cake from the refrigerator and cut it into squares with a sharp knife. Serve cold.

Tips for Success

Keep the cream cold: Cold heavy cream whips more easily and produces a fluffy filling.

Use firm strawberries: Very soft strawberries can release too much liquid.

Don’t rush the chilling: The refrigerator time allows the cookies to absorb moisture and become soft.

Don’t overwhip the cream: Stop once it becomes thick and fluffy.

Use plain biscuits: Graham crackers, digestive biscuits, or plain tea biscuits all work well.

Strawberry Cheesecake Variation

For a richer dessert, beat 4 ounces of softened cream cheese until smooth and gently fold it into the whipped cream. This gives the filling a creamy cheesecake flavor.

Lemon Strawberry Variation

Add 1 teaspoon of finely grated lemon zest to the whipped cream. Lemon adds a bright flavor that works beautifully with strawberries.

Chocolate Strawberry Variation

Add a thin layer of chocolate pudding between some of the layers for a chocolate-and-strawberry dessert.

Storage

Keep the icebox cake covered in the refrigerator. It is best enjoyed within 2โ€“3 days. The dessert will become softer as it sits because the cookies continue absorbing moisture.
