๐ŸŒฎ Homemade Gluten-Free Tortillas

๐ŸŒฎ Homemade Gluten-Free Tortillas

Ingredients

  • 2 cups gluten-free all-purpose flour blend
  • ยฝ teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • ยพ cup warm water, plus a little more if needed
  • 1 teaspoon xanthan gum, only if your flour blend does not already contain it

Instructions

1. Combine the Dry Ingredients

Add the gluten-free flour, salt, and baking powder to a large bowl.

If your flour blend does not contain xanthan gum, add it now.

Whisk everything together so the ingredients are evenly distributed.

2. Add the Oil

Pour in the olive oil and mix it through the flour.

The oil helps make the tortillas softer and more flexible.

3. Add Warm Water

Gradually pour in the warm water while mixing.

Continue stirring until a soft dough forms.

The dough should be moist and smooth but not extremely sticky. If it seems dry or cracks easily, add another teaspoon of warm water at a time.

4. Rest the Dough

Cover the bowl and let the dough rest for about 10โ€“15 minutes.

This gives the flour time to absorb the water and makes the dough easier to shape.

5. Divide the Dough

Divide the dough into 8 equal portions.

Roll each portion gently between your hands to make a smooth ball.

6. Roll the Tortillas

Place one dough ball between two sheets of parchment paper.

Press it gently with your hand, then roll it out into a thin circle.

Aim for approximately 6โ€“7 inches (15โ€“18 cm) in diameter.

Don’t make the tortillas paper-thin because they can become difficult to handle.

7. Heat the Pan

Place a dry non-stick or cast-iron skillet over medium heat.

Allow it to become properly hot before cooking.

You don’t need to add oil to the pan.

8. Cook the Tortilla

Carefully peel the tortilla away from the parchment and place it in the hot skillet.

Cook for approximately 45โ€“60 seconds on the first side.

When small bubbles begin to appear and the underside has a few light brown spots, flip it.

Cook the second side for another 30โ€“45 seconds.

Avoid overcooking because this can make gluten-free tortillas dry and brittle.

9. Keep Them Soft

Transfer each cooked tortilla to a clean kitchen towel and cover it immediately.

Stack the tortillas as you cook them.

The trapped warmth helps keep them soft and flexible.

Tips for Soft Gluten-Free Tortillas

Use Warm Water

Warm water helps the flour hydrate properly and makes the dough easier to work with.

Don’t Add Too Much Flour

Gluten-free dough can become dry quickly. If the dough feels slightly soft, that’s usually better than making it too dry.

Roll Between Parchment

Gluten-free dough doesn’t have the elasticity of wheat dough, so parchment paper makes rolling much easier.

Don’t Overcook

Long cooking can remove moisture and make the tortillas crack when folded.

Keep Them Covered

Always cover cooked tortillas with a clean towel while preparing the remaining ones.

Serving Ideas

These tortillas can be used in many different ways.

๐ŸŒฏ Chicken Wrap

Fill a tortilla with cooked chicken, lettuce, tomato, cucumber, and your favorite sauce.

๐ŸŒฎ Tacos

Fill warm tortillas with seasoned meat or beans, lettuce, tomatoes, cheese, and avocado.

๐Ÿง€ Quesadillas

Place cheese between two tortillas and cook in a skillet until the cheese melts and the tortillas become lightly crisp.

๐Ÿฅ‘ Breakfast Wrap

Fill with scrambled eggs, vegetables, cheese, and cooked chicken or beans.

Storage

Allow the tortillas to cool completely.

Place parchment paper between them and store them in an airtight container or reusable bag.

They can be refrigerated for several days.

For longer storage, freeze them with parchment between each tortilla. Thaw them and warm briefly in a skillet before serving.

Troubleshooting

Tortilla cracks when rolling:
The dough may be too dry. Add a small amount of warm water and knead gently.

Tortilla sticks to parchment:
Let the dough rest for a few more minutes and make sure it isn’t excessively wet.

Tortilla becomes hard:
It may have been cooked too long. Reduce the cooking time slightly.

Tortilla won’t hold together:
Check whether your gluten-free flour blend contains xanthan gum or another suitable binder. If it doesn’t, adding a small amount can improve flexibility.

Final Result

These homemade gluten-free tortillas are soft, flexible, and delicious. They are much fresher than packaged tortillas and can be customized for wraps, tacos, quesadillas, and many other meals.

For the softest result, cook them briefly, stack them while warm, and keep them covered until you’re ready to serve.
