Ingredients
For the Cake
- 6 large eggs, separated
- 4 tablespoons unsalted butter, melted and slightly cooled
- 4 tablespoons cream cheese, softened
- ½ cup powdered erythritol or another keto-friendly powdered sweetener
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup almond flour
- 2 tablespoons heavy cream
- ¼ teaspoon cream of tartar
Optional Topping
- ½ cup heavy whipping cream
- 1–2 tablespoons powdered keto sweetener
- ½ teaspoon vanilla extract
- A few fresh berries, such as strawberries, raspberries, or blueberries
- Unsweetened shredded coconut, optional
Instructions
Preheat your oven to 325°F (165°C). Grease an 8-inch round cake pan and line the bottom with parchment paper. Because this cake is exceptionally delicate, parchment helps prevent it from sticking when you remove it from the pan.
Start by separating the eggs carefully. Place the egg whites in a completely clean, dry mixing bowl. Even a small amount of egg yolk or grease can prevent the whites from whipping properly. Put the yolks in a separate bowl.
In the bowl containing the egg yolks, add the softened cream cheese, melted butter, heavy cream, vanilla extract, and powdered keto sweetener. Whisk until the mixture becomes smooth and creamy. If your cream cheese is still cold, allow it to soften before mixing; this will make the batter much smoother.
Add the almond flour, baking powder, and salt to the yolk mixture. Stir gently until everything is incorporated. The mixture should be thick but smooth. Avoid overmixing once the flour has been incorporated.
Now turn your attention to the egg whites. Add the cream of tartar and begin beating them with an electric mixer at medium speed. As the whites become foamy, gradually increase the speed. Continue beating until soft peaks form. When you lift the beaters, the egg whites should hold their shape but the tips should gently bend over.
This step is the most important part of the recipe because the whipped egg whites provide most of the cake’s volume. Do not rush the process, and do not beat the whites until they become extremely dry or crumbly.
Take about one-third of the whipped egg whites and gently fold them into the almond-flour batter. Use a large spatula and make slow, sweeping movements from the bottom of the bowl upward. This first portion lightens the batter and makes it easier to incorporate the remaining egg whites.
Add another third of the egg whites and fold gently. Finally, add the remaining egg whites and continue folding until you no longer see large white streaks. Do not stir vigorously. Overmixing will knock the air out of the egg whites and result in a dense cake.
Pour the batter into your prepared cake pan and gently smooth the surface. Place the pan in the center of the preheated oven.
Bake for approximately 25–35 minutes, depending on your oven and the depth of your pan. The cake should become lightly golden on top and feel springy when gently touched in the center. A toothpick inserted into the middle should come out mostly clean.
Try not to open the oven repeatedly while the cake is baking. Sudden temperature changes can cause an airy cake to collapse.
When the cake is finished, remove it from the oven and allow it to cool in the pan for about 10 minutes. Run a thin knife around the edges, then carefully transfer the cake to a wire rack. Allow it to cool completely before adding any topping.
For a simple keto cream topping, beat the cold heavy cream with powdered keto sweetener and vanilla until soft peaks form. Spread the whipped cream over the cooled cake. Add a small amount of fresh berries if desired.
Tips for the Perfect Keto Cloud Cake
Use powdered sweetener. Granulated sweeteners can sometimes leave a slightly gritty texture. Powdered erythritol or a powdered monk-fruit blend generally dissolves more smoothly.
Don’t skip the cream of tartar. It helps stabilize the whipped egg whites, making it easier for the cake to maintain its airy structure.
Fold, don’t stir. The cake depends on trapped air for its fluffy texture. Gentle folding preserves that air.
Measure almond flour carefully. Too much almond flour can make the cake heavy. For the most consistent results, weighing the flour is preferable to packing it tightly into a measuring cup.
Let the cake cool completely. The texture continues to set as the cake cools. Cutting it while it is still warm can make it seem softer and more fragile than it actually is.
Serving Suggestions
Keto Cloud Cake is delicious on its own, but you can easily dress it up. Serve individual slices with a spoonful of lightly sweetened whipped cream and a few berries. For a chocolate version, add 1–2 tablespoons of unsweetened cocoa powder to the dry ingredients and slightly increase the sweetener if needed.
You can also make a lemon version by adding 1 teaspoon of finely grated lemon zest and a small amount of fresh lemon juice to the batter. For a coconut variation, replace a small portion of the almond flour with unsweetened shredded coconut.
If you prefer a richer dessert, make a simple keto cream-cheese frosting using softened cream cheese, butter, powdered keto sweetener, vanilla, and a splash of heavy cream. Spread a thin layer over the cooled cake.
Storage
Store leftover cake in an airtight container in the refrigerator for up to 3–4 days. If you have added whipped cream or fresh fruit, refrigeration is especially important.
The cake may become slightly firmer when chilled. Allowing a slice to sit at room temperature for several minutes before serving can bring back some of its soft texture.
Nutrition Note
The exact nutritional values depend on the brands of almond flour, cream cheese, sweetener, and other ingredients you use. For a keto diet, calculate carbohydrates using the specific products in your kitchen and pay attention to net carbohydrates if that is how you track your intake.
This Keto Cloud Cake is best enjoyed as a light, occasional dessert rather than simply because it is labeled “keto.” Its combination of eggs, almond flour, butter, and cream cheese gives it a satisfying richness while keeping the texture remarkably airy.
With its delicate crumb, gentle sweetness, and almost cloud-like texture, this cake makes a beautiful low-carb dessert for birthdays, afternoon tea, family gatherings, or whenever you want something sweet without traditional wheat flour and sugar.
