Ingredients
For the Pavlova
- 4 large egg whites, preferably at room temperature
- ½ cup (100 g) superfine or caster sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon cornstarch
- 1 teaspoon lemon juice or white vinegar
- Pinch of salt
For the Healthy Yogurt Topping
- 1 cup (240 g) plain Greek yogurt
- 1–2 tablespoons honey or pure maple syrup
- ½ teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- ½ cup fresh blueberries
- ½ cup fresh raspberries
- ½ cup blackberries
- Fresh mint leaves, optional
Instructions
1. Prepare the Oven
Preheat your oven to 150°C (300°F). Line a large baking tray with parchment paper. Draw an approximately 20 cm (8-inch) circle on the parchment, then turn the paper over so the pencil or pen doesn’t touch the pavlova.
Make sure your mixing bowl and beaters are completely clean and dry. Even a small amount of grease can prevent the egg whites from whipping properly.
2. Whip the Egg Whites
Separate the eggs carefully, making sure there is no trace of yolk in the whites.
Place the egg whites and salt in a large bowl. Using an electric mixer, beat on medium speed until the whites become foamy. Increase the speed to medium-high and continue beating until soft peaks form.
The egg whites should look white and fluffy and should hold their shape briefly when you lift the beaters.
3. Gradually Add the Sugar
Add the caster sugar one tablespoon at a time, beating continuously between additions. Don’t rush this step. Gradually incorporating the sugar creates a smoother, more stable meringue.
Continue beating for several minutes after all the sugar has been added. The mixture should become thick, glossy, and capable of holding stiff peaks.
To check whether the sugar has dissolved, rub a small amount of meringue between your fingertips. It should feel mostly smooth rather than gritty.
4. Add Vanilla and Stabilizers
Gently fold in the vanilla extract, cornstarch, and lemon juice or vinegar.
The cornstarch helps create the characteristic soft, marshmallow-like center, while the small amount of acid helps stabilize the meringue.
Be gentle when folding so you don’t knock too much air out of the mixture.
5. Shape the Pavlova
Spoon the meringue onto the prepared parchment circle. Use the back of a spoon or a spatula to shape it into a round, relatively tall mound.
Create a shallow indentation in the center. This will give you a natural place to add the yogurt and berries later.
You don’t need perfectly smooth edges. In fact, slightly rustic swirls and peaks give a homemade pavlova a beautiful appearance.
6. Bake Slowly
Place the pavlova in the oven and immediately reduce the temperature to 120°C (250°F).
Bake for approximately 75–90 minutes, or until the outside feels dry and crisp and has a very pale cream color.
Try not to open the oven door repeatedly during baking, as sudden temperature changes can cause the pavlova to collapse or crack.
Once baked, turn off the oven and leave the pavlova inside with the door slightly open. Allow it to cool completely, preferably for at least 1–2 hours.
Don’t worry if small cracks appear. Pavlova is naturally delicate, and the toppings will cover many of them.
7. Make the Yogurt Cream
While the pavlova cools, prepare the topping.
Add Greek yogurt, honey or maple syrup, and vanilla extract to a bowl. Stir until smooth and creamy.
Taste and adjust the sweetness if necessary. If your berries are particularly sweet, you may need very little additional sweetener.
For an even richer texture, you can use thick strained Greek yogurt. Avoid very watery yogurt because it can make the pavlova soggy.
8. Prepare the Berries
Wash the berries gently and dry them thoroughly.
Slice the strawberries and leave the blueberries, raspberries, and blackberries whole. You can also use other seasonal fruit such as cherries, blackberries, peaches, or pomegranate seeds.
For a beautiful presentation, choose berries with different colors and sizes.
9. Assemble the Pavlova
Carefully transfer the cooled pavlova to a serving plate.
Spoon the vanilla Greek yogurt into the center and spread it gently toward the edges, leaving some of the crisp meringue visible.
Arrange the strawberries, blueberries, raspberries, and blackberries generously over the yogurt.
Finish with a few fresh mint leaves if desired.
For the best texture, assemble the pavlova just before serving. The longer the yogurt sits on the meringue, the softer the crisp exterior will become.
Healthy Tips
This recipe is lighter than many traditional pavlova recipes because the topping uses protein-rich Greek yogurt instead of heavy whipped cream. Fresh berries also provide natural sweetness, color, fiber, and a range of vitamins and antioxidants.
For an even less-sweet version, reduce the honey or maple syrup in the yogurt topping. Keep in mind, however, that sugar isn’t only responsible for sweetness in a meringue—it also contributes to its structure and stability. Therefore, dramatically reducing the sugar in the meringue itself can make the pavlova less stable.
You can make individual mini pavlovas instead of one large dessert. Simply spoon smaller circles of meringue onto the tray and reduce the baking time, checking them regularly.
Make-Ahead Instructions
The baked pavlova can be prepared several hours ahead and kept at room temperature in a dry place. Protect it from humidity, as moisture can soften the meringue.
The yogurt topping can be prepared and refrigerated separately. Wash and prepare the berries shortly before serving.
Avoid assembling the pavlova too far in advance. Ideally, add the yogurt and fruit shortly before bringing it to the table.
Serving
For the prettiest presentation, place the pavlova on a large white serving platter and pile the berries high in the center. Add a few mint leaves and, if desired, a very light drizzle of honey.
Serve immediately with a sharp knife or cake server. Each portion should include some of the crunchy outer meringue, soft vanilla center, creamy yogurt, and juicy berries.
This Healthy Vanilla Berry Pavlova makes an elegant dessert for birthdays, afternoon tea, summer gatherings, or any occasion when you want something impressive without a heavy cream-based topping. The combination of crisp meringue, creamy vanilla yogurt, and fresh berries gives you a dessert that feels indulgent while remaining wonderfully fresh and light.
