  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • ¾ cup (180 ml) whole milk, at room temperature

For the cream filling

  • 1½ cups (360 ml) cold heavy whipping cream
  • ½ cup (60 g) powdered sugar
  • 1½ teaspoons vanilla extract
  • 2 tablespoons instant vanilla pudding mix, optional
  • 2 tablespoons cream cheese, softened, optional

For the vanilla syrup

  • ¼ cup (60 ml) water
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract

For decorating

  • Powdered sugar, for dusting
  • Fresh strawberries or raspberries, optional
  • White chocolate curls, optional
  • A little whipped cream, optional

Instructions

1. Prepare the oven and cake pans

Preheat your oven to 175°C (350°F). Grease two 8-inch round cake pans and line the bottoms with parchment paper. Lightly dust the sides with flour.

Using two pans allows you to bake two even layers that can later be filled with a generous amount of vanilla cream. If you only have one pan, bake the cake as one layer and carefully slice it horizontally after it has cooled completely.

2. Mix the dry ingredients

In a medium bowl, whisk together the flour, baking powder, and salt. Mixing the dry ingredients separately helps distribute the baking powder evenly throughout the flour, giving the cake a consistent rise.

Set the bowl aside while you prepare the wet ingredients.

3. Cream the butter and sugar

Place the softened butter and granulated sugar in a large mixing bowl. Beat with an electric mixer for about 3–4 minutes, until the mixture becomes pale, fluffy, and creamy.

This step is important because beating air into the butter helps create a light cake texture. Make sure your butter is softened but not melted.

Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Mix in the vanilla extract.

4. Combine everything

Add about one-third of the flour mixture to the butter mixture and mix on low speed. Pour in half of the milk and mix gently.

Continue alternating the remaining flour and milk, beginning and ending with the flour. Mix only until the batter is smooth and combined.

Avoid overmixing at this stage. Too much mixing can develop the gluten in the flour and make your vanilla cake dense instead of soft.

5. Bake the cake

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Bake for approximately 22–28 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Carefully transfer them to a wire rack and let them cool completely.

Do not attempt to fill the cake while it is warm. Heat will cause the cream filling to melt.

6. Make the vanilla syrup

While the cake cools, prepare a simple vanilla syrup.

Add the water and sugar to a small saucepan. Heat over medium heat, stirring until the sugar dissolves. Remove from the heat and stir in the vanilla extract.

Let the syrup cool completely.

The syrup is optional, but brushing a small amount over the sponge gives the cake extra moisture and an irresistible bakery-style texture.

7. Prepare the cream filling

Pour the cold heavy cream into a chilled mixing bowl. Add the powdered sugar and vanilla extract.

Beat on medium-high speed until the cream forms soft peaks. If you want a firmer filling, add the instant vanilla pudding mix and continue beating until the cream reaches stiff peaks.

For an extra-rich filling, gently beat in the softened cream cheese. This gives the filling a slight tang and helps it hold its shape.

Be careful not to overbeat the cream, as it can become grainy and eventually turn into butter.

8. Assemble the viral cake

Place the first cake layer on a serving plate or cake board.

Using a pastry brush, lightly brush the top with vanilla syrup. Spread a thick, even layer of vanilla cream over the cake, leaving a small border around the edge.

Place the second cake layer on top and gently press it down so the cream spreads evenly.

For the classic viral appearance, don’t completely cover the cake with frosting. Instead, keep the outside simple and elegant. Dust the top generously with powdered sugar.

You can also pipe small swirls of whipped cream around the edge and add fresh berries or white chocolate curls for a more festive presentation.

9. Chill before serving

Refrigerate the assembled cake for at least 1–2 hours before slicing. This allows the cream filling to set and makes the cake much easier to cut.

For the cleanest slices, use a sharp knife and wipe it clean between cuts.

Tips for the Perfect Cream-Filled Vanilla Cake

Use room-temperature ingredients. Room-temperature eggs, butter, and milk blend more smoothly and help create a uniform batter.

Don’t overmix. Once the flour is incorporated, stop mixing. This keeps the sponge soft and tender.

Keep the cream cold. Cold whipping cream reaches stiff peaks more easily and produces a more stable filling.

Don’t soak the cake excessively. Vanilla syrup should add moisture, not make the sponge wet. A light brushing is enough.

Chill the finished cake. Because this cake contains a fresh cream filling, it should remain refrigerated until serving.

Make it ahead. You can bake the sponge a day ahead, wrap the cooled layers tightly, and store them at room temperature. Prepare the cream and assemble the cake on the day you plan to serve it.

Serving Suggestions

Serve this viral vanilla cake chilled or slightly cool. Pair each slice with fresh strawberries, berries, or a drizzle of vanilla sauce. For a special occasion, add colorful sprinkles between the cream layers or decorate the top with delicate white chocolate curls.

The contrast between the fluffy vanilla sponge and silky cream filling is what makes this cake so addictive. It is light enough to enjoy after dinner but special enough for birthdays, holidays, afternoon tea, and celebrations.

Storage

Store the finished cake in an airtight container in the refrigerator for up to 3 days. Because the filling contains whipped cream, avoid leaving the cake at room temperature for extended periods.

For the best texture and flavor, let a refrigerated slice sit for about 10 minutes before serving.

Final Result

With its soft vanilla sponge, creamy center, delicate sweetness, and beautiful powdered-sugar finish, this cream-filled vanilla cake is the kind of dessert that looks luxurious without requiring complicated decorating skills. The recipe is straightforward, but the final result feels bakery-worthy—and one bite of the fluffy cake with that rich vanilla cream filling makes it easy to understand why this style of cake has become so popular.
